This is Babi M’s famous cheesecake that was and still is served at her Shvuos Kiddush. It’s been passed on ke”h to three generations and it still gets rave reviews
Preheat oven to 350 degrees Fahrenheit. This recipe is good for one 10- by 16-inch pan.
Defrost dough and roll out larger half. Line pan with this dough.
Roll out other half and cut 1/2-inch strips. Set aside.
Prepare filling, pour into pan over the dough, top with cut strips by creating crisscross design, leaving open spaces of cheese filling (see photo).
Brush with beaten egg. Bake 1 to 1 and 1/4 hours till golden. Cool. Cut up while cool. Triple wrap and freeze. Defrost slightly to cut squares
-The original recipe calls for 1 pound cottage cheese, but I prefer to use half cottage cheese and half whipped cream cheese – I find the finished product cuts nicer.
-Also nice with lattice cutter vs these crisscross strips.
