Using a simple and easy ingredient can make a world of a difference in texture. Enjoy!

Ingredients

“Baby” Carrot Muffin

  • pinch of salt

  • 4 Tbsp orange juice

  • 1 cup oil

  • 3 baby carrot jars

  • 4 eggs

  • 1 tbsp vanilla sugar

  • 2 cups sugar

  • 2 cups flour

  • 1 tsp baking powder

  • 1 flat tsp baking soda

  • 1/2 tsp cinnamon

  • 1 and 1/2 tsp vanilla extract

Directions

Prepare the “Baby” Carrot Muffin

1.

Preheat the oven to 350 degrees Fahrenheit.

2.

Mix all the ingredients besides the carrots.

3.

Add the carrots.

4.

Finish mixing it with a hand blender.

5.

Pour batter into lined cupcake pans.

6.

Bake for 25 minutes on 350 degrees Fahrenheit.
