Diets A delicious alternative to the fried latke. Using farmer cheese as the base, it comes out filled with flavor without being oily.
3 cups farmer cheese
2 eggs plus 3 egg whites
1 cup gluten free (brown rice) flour
1/2 teaspoon pure vanilla extract
3/4 teaspoon salt
1/4 teaspoon Haddar Baking Powder

Preheat oven to 425 degrees Fahrenheit. Grease a baking sheet liberally.
In a medium bowl, combine cheese, eggs, egg whites, flour, vanilla, baking powder and salt (not cinnamon sugar). I did this by hand. It is thick and heavy and I was ready to add another egg or some other liquid, but no, it did not need it.
I used a quarter cup measure and flattened it on the greased baking sheet. Sprinkle with cinnamon sugar and spray with cooking oil. Bake for eight to 10 minutes until golden.
It is sweet enough with the cinnamon and sugar but the addition of jelly or syrup would work.
