Diets Baked Pumpkin Oatmeal is a delicious way to liven up your breakfast routine. Easy to make, add in items to suit your tastes too.
2 and 1/4 cups rolled oats
1/2 cup Shibolim White Whole Wheat Flour
1 and 1/4 teaspoon baking powder
1 and 1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon nutmeg
1 teaspoon ginger, ground
3/4 cup pumpkin puree
1 egg
1 cup milk
1/4 cup Gefen Honey
1/4 cup Gefen Sweetened Dried Cranberries, chopped
1/4 cup white chocolate chips
Preheat oven to 350 degrees Fahrenheit. Spray eight- by eight-inch square baking pan with non-stick cooking spray.
In bowl combine dry ingredients & stir well.
With electric mixer combine: pumpkin puree, egg, milk and honey. Pour in dry ingredients and mix just until blended.
Stir in dried cranberries and white chocolate chips.
Pour into prepared baking pan.
Bake approximately 25–28 minutes. Check for doneness by inserting a toothpick into center, if it comes out clean remove from oven.
Cool before cutting.
