Baked Pumpkin Oatmeal is a delicious way to liven up your breakfast routine. Easy to make, add in items to suit your tastes too.

Ingredients

Main ingredients

  • 2 and 1/4 cups rolled oats

  • 1/2 cup Shibolim White Whole Wheat Flour

  • 1 and 1/4 teaspoon baking powder

  • 1 and 1/2 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1/4 teaspoon nutmeg

  • 1 teaspoon ginger, ground

Directions

Prepare the Baked Oatmeal

1.

Preheat oven to 350 degrees Fahrenheit. Spray eight- by eight-inch square baking pan with non-stick cooking spray.

In bowl combine dry ingredients & stir well.

With electric mixer combine: pumpkin puree, egg, milk and honey. Pour in dry ingredients and mix just until blended.

4.

Stir in dried cranberries and white chocolate chips.

5.

Pour into prepared baking pan.

6.

Bake approximately 25–28 minutes. Check for doneness by inserting a toothpick into center, if it comes out clean remove from oven.

7.

Cool before cutting.

Notes:

You can warm and eat with a fork or cool completely and cut into bars.
