Diets Whether you decide to make this as a cake or muffins, the batter is extremely easy to put together. A large cookie scoop is the perfect amount of batter for a regular size cupcake. The cake or cupcake rises really nicely, and is extremely light and moist. Feel free to add in nuts or chocolate chips to spice it up a bit.
