1/2 cup oil
3/4 cup sugar
1 egg
1 and 1/2 cups flour
1 teaspoon baking powder
1 teaspoon vanilla extract
1/2 teaspoon salt
2 ripe bananas
1 teaspoon baking soda with 1 teaspoon boiling water
1 cup chocolate chips
Preheat the oven to 375 degrees Fahrenheit. Grease or line muffin tins.
In a bowl, cream together the first seven ingredients in order listed.
In a separate bowl, mash the bananas and mix in the baking soda and water solution.
Add banana mixture to the first bowl and mix together.
Add chocolate chips.
Fill the tins three quarters of the way with the batter.
Bake at 375 degrees Fahrenheit for 15 to 17 minutes. Remove and cool.
