1 stick (1/2 cup) margarine
1 and 1/2 cups sugar
1 teaspoon vanilla
2 eggs
4 extra ripe bananas
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
3 tablespoons creamer or milk
1 stick (1/2 cup) margarine
2 teaspoons cinnamon
1 cup brown sugar
1 cup flour
1 cup powdered sugar
1 tablespoon oil
1–2 tablespoons water
Cream margarine and sugar until fully combined.
Add vanilla and eggs and mix. Mix in bananas.
Add the dry ingredients to the same bowl and mix. Mix in the creamer or milk.
Pour the batter into a 9×13 pan. Bake at 350 degrees Fahrenheit for 20 minutes.
Meanwhile, prepare the streusel crumbs. Combine with your hands until the texture resembles wet sand.
Remove the cake from the oven, top with the streusel, and then return to the oven for 20 to 30 minutes.
Combine the ingredients for the glaze. When the cake is cooled, drizzle glaze on top.

love this recipe! would really recommend!
I made many changes to this recipe. I used 1/3 cup oil i/o the marg, cut the sugar down to 1/2 cup! Ripe bananas are VERY sweet on their own. I used 80% whole wheat flour. I also added a few handfuls of choc chips on top of the batter to give it character. In the streusel I used 4 Tbsp oil i/o marg and just 1/2 cup brown sugar. I think the streusel should be added before baking because it doesn’t stick to the cake once it’s baked 20 minutes. Also it’s a low cake, so 15 minutes is more than sufficient for baking after adding the streusel. I will probably add a small amount of the glaze just so the streusel sticks. If I would’ve used all the sugar, that would be 1 1/2 + 1 in the streusel and 1 in the glaze. 3 1/2 cups of sugar is way too much for one cake! ALso, I mixed the streusel in a bag. Saves clean up.
Will Soy Milk Work?
Yes, any non-dairy milk would work.
This was a big hit!
