These baby chicken skewers are one of my favorite varieties of chicken. Soft and juicy on the inside, with refreshing pesto flavors on the outside—it’s the most mouthwatering combination. They also add that extra pop of color that you need on your Yom Tov table!
2 cups fresh basil, finely chopped
5 cloves garlic, minced or 5 cubes Gefen Frozen Garlic
3/4 cup pine nuts
3/4 cup Gefen Olive Oil
1/4 cup grainy mustard (or deli mustard)
1/4 cup Haddar Brown Sugar
1 teaspoon salt
3 pounds baby chicken
In a bowl, combine basil, garlic, pine nuts, oil, mustard, sugar, and salt.
To a large zip-top bag, add the chicken and 3/4 of the marinade. Seal and shake the bag to fully coat the chicken. Reserve the remaining 1/4 of the marinade for serving.
Marinate chicken at least two to three hours and up to overnight.
Preheat a grill or grill pan to high heat. Thread chicken onto skewers and grill about five minutes per side, until golden brown.
To serve, pour remaining marinade over skewers.
