3 onions, chopped
1 package mushrooms, cleaned and sliced
seasoning (I used garlic salt and mushroom umami)
3 packages Tuscanini Gnocchi
marinara sauce, such as Tuscanini
shredded cheese
some fresh basil (optional)
Preheat oven to 400 degrees Fahrenheit.
In a frying pan over medium heat, sauté the onions in a little oil until translucent. Remove from the pan and set aside.
In the same pan, sauté the mushrooms in a little oil until they have browned and shrunk. Use your favorite seasonings on the mushrooms.
Spray a 9 x 13-inch pan. Add layer of gnocchi (use one full package). Cover generously with marinara sauce, followed by cheese, half of the mushrooms and onions, and some fresh basil if desired. Repeat two times, omitting mushrooms and onions from the final layer.
Cook for 45 minutes to one hour.
