This dessert is amazing! The gnocchi is soft and chewy on the inside and crunchy on the outside.
1 package Tuscanini Gnocchi
1 tablespoon neutral oil, like sunflower
1/2 cup (1 stick) butter
1 cup brown sugar
1/2 teaspoon salt
1 banana, sliced (optional)
vanilla ice cream for serving
Cook gnocchi according to instructions on the package.
Toss with oil and let cool.
Slice gnocchi into thirds and set aside.
Working in batches (this is important so that gnocchi caramelizes), add 1/3 stick butter, 1/3 cup brown sugar and a few pinches of salt to a large frying pan.
After butter is melted, toss in 1/3 of the gnocchi (and banana if you are using) and cook until gnocchi begins to caramelize.
Transfer to individual plates and serve with a scoop of vanilla ice cream. Spoon extra sauce on top of ice cream. Serve immediately.
