Cabbage Salad With Caramelized Almonds

Ingredients

Salad

  • 1 package red cabbage

  • handful dried cranberries

  • optional a bit of green leaves for colour

Caramelized Almonds

  • 300 grams almonds

  • 3 tablespoons brown sugar

Dressing

  • 5 tablespoons mayonnaise

  • 2/3 cup sugar

  • 1 teaspoon mustard

  • 1/3 cup vinegar

  • 1/3 cup oil

  • pinch garlic powder

Directions

1.

To caramelise almonds, place almonds and brown sugar in a frying pan and place on a low/medium heat. Keep stirring till the sugar has melted and covers the almonds. Cool.

2.

Mix the dressing ingredients well.

3.

Place red cabbage, nuts, and optional greens in a bowl and top with dressing.
