4–6 boneless skinless chicken thighs (pargiot)
1 medium onion, thinly sliced
1 and 1/2 cups BBQ sauce (I use Old Williamsburg Bourbon BBQ Sauce—so good!)
pretzel buns
pickles + any toppings you like
garlic mayo
1 cup shredded red cabbage
1 cup shredded green cabbage
1/4 cup mayo
2 tablespoons white vinegar
1 and 1/2 tablespoons honey
salt, to taste
pepper, to taste
Add thinly sliced onion circles lining the bottom of the crockpot, then layer chicken on top.
Pour BBQ sauce over the chicken, making sure everything is well coated.
Cover and cook on high for two hours, then shred the chicken and continue cooking for one more hour, stirring occasionally. (Or cook on low for six to eight hours.)
While it cooks, mix together all coleslaw ingredients until combined.
Toast pretzel buns if desired. Spread with garlic mayo, add BBQ pulled chicken, top with coleslaw, pickles, and any extra toppings.
