  • 1/2 teaspoon smoked paprika

Sandwich Dressing

  • 1 teaspoon vinegar

  • drop black pepper

Sandwich Assembly

  • 6 sandwich buns

  • lettuce

  • coleslaw

  • purple onion, very thinly sliced

  • 1 large bag barbecue potato chips (not crushed)

Directions

Prepare the Chicken Cutlets

1.

In a shallow bowl, whisk together the eggs, mustard, garlic powder, smoked paprika and barbecue sauce.

2.

Place the finely crushed barbecue potato chips into a second shallow dish.

Fry the cutlets for four to five minutes on each side until crispy.

Place all the dressing ingredients in a bowl and mix well.

Assemble

1.

Lay the bottom buns down and spread barbecue dressing over them.
