It was a Saturday night, my husband and I were watching a movie, and I was so in the mood for Nachos. The problem was I was still fleishig. So I came up with these. And I have wanted them for dinner every night since.
1 tsp oil
1 lb ground turkey (or favorite ground meat)
1/4 cup BBQ sauce
1/2 cup apple cider vinegar
1.5 cups white vinegar
4 tbsp sugar
6 tsp salt
2 jalapenos cut in half, seeds removed and sliced
2 scallions, sliced
1 avocado, diced
tortilla chips
Parve ranch dressing, for drizzling
BBQ sauce, for drizzling
Fill a mason jar with as many onions will fit. In a separate container, mix together the vinegars, sugar and salt. Pour the mixture over the onions so that the mason jar is completely full and all the onions are covered.
If you need them right away, let sit for 1 hour. Otherwise, let the onions sit at room temperature overnight, then move to the fridge.
Place the jalapeños on a greased baking sheet, drizzle with olive oil, and roast in the oven at 425 for 15 minutes.
In a frying pan, add a tsp of oil and sauté the meat over medium heat, until browned. Add 1/4 cup BBQ sauce and mix until well coated.
Place chips on a plate, top with meat, roasted jalapeños, scallions, pickled onions, and avocado.
Drizzle with BBQ sauce and parve ranch.

Needed something new One change. Will make lime Crema. One container tofutti sour cream, lime zest, juice of a lime, tsp granulated garlic. We did not use ranch dressing.
