1 box Tuscanini Kidney Beans
1/2 red pepper, diced
1/4 orange pepper, diced
1/4 yellow pepper, diced
3 green onions, thinly sliced
4 tablespoons fresh, cleaned cilantro, roughly chopped
3 tablespoons fresh lime juice (1 and 1/2 to 2 limes)
2 tablespoons Tuscanini Extra-Virgin Olive Oil
1 tablespoon Tuscanini Apple Cider Vinegar
1/4 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Mix all dressing ingredients together.
In a separate bowl, toss salad ingredients.
Pour dressing over salad and allow to sit for 15 minutes, or keep in the refrigerator for up to 24 hours.
