Beef-Fry Salad with Maple Cider Vinaigrette

Think of the beef fry as a protein-based crouton, crisp and salty!

Ingredients

Salad

  • 5 ounces baby arugula

  • 6 radishes

  • 4 ounces facon or beef fry, fried, and cut into strips

Dressing

  • 2 and 1/2 tablespoons pure maple syrup

  • 2 tablespoons Tonnelli Apple Cider Vinegar

  • 1 tablespoon white vinegar (use distilled for gluten-free)

  • 1 tablespoon olive oil

  • 1/8 teaspoon salt

  • dash of black pepper

Directions

Prepare the Salad

1.

Using a mandolin or peeler, shave the radishes.

2.

In a large bowl, combine radishes and arugula. In a separate bowl, whisk together dressing ingredients.

3.

Toss salad with maple cider dressing and top with beef fry strips.
