Think of the beef fry as a protein-based crouton, crisp and salty!
5 ounces baby arugula
6 radishes
4 ounces facon or beef fry, fried, and cut into strips
2 and 1/2 tablespoons pure maple syrup
2 tablespoons Tonnelli Apple Cider Vinegar
1 tablespoon white vinegar (use distilled for gluten-free)
1 tablespoon olive oil
1/8 teaspoon salt
dash of black pepper
Using a mandolin or peeler, shave the radishes.
In a large bowl, combine radishes and arugula. In a separate bowl, whisk together dressing ingredients.
Toss salad with maple cider dressing and top with beef fry strips.
