After lots and lots of fried latkes and donuts, this salad is a refreshing way to eat some more fried food while still feeling somewhat healthy =)

greens of your choice
pre-cooked beets, diced
feta cheese
purple onion, sliced
cooked quinoa
salt
oil, for frying
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon honey
1 and 1/2 tablespoons lemon juice
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
freshly ground black pepper, to taste
Spread cooked quinoa on a baking sheet to cool and dry for 30 minutes.
Heat 1/2 inch oil in a pan/pot over medium heat.
Add quinoa and fry till crispy, about two minutes.
Remove from oil and place on paper towel to drain.
Season with salt.
Whisk all dressing ingredients together.
Layer greens, beets, purple onions, and crispy quinoa in a serving bowl. Mix with dressing.
Top with crumbled feta and enjoy!
