4 beets, peeled (or 4 Gefen Organic Beets; if using skip to step 2 in directions)
1 red onion, sliced
1 tablespoon Gefen Lemon Juice
1 tablespoon Gefen Salt
1 teaspoon sugar
Bring a pot of water to a boil, then cook beets until soft.
Let cool, then cut in half and slice.
Toss with remaining ingredients and adjust seasoning to taste.
