Ingredients

Beets with Garlic Mayo and Raspberry Glaze

  • fresh beets (cooked and sliced)

  • garlic mayo (store-bought, such as Gefen, or homemade)

  • mixed greens (like arugula or spinach)

Directions

1.

Arrange the beet slices on a big platter.

2.

Place a dollop of garlic mayo on each slice of beet and top with some greens, and chopped pistachios.

3.

Drizzle with balsamic glaze to tie it all together.
