Ingredients

Dough

  • 4 cups bread flour (I substitute 2 cups white whole wheat flour often, King Arthur is the best flour for both)

  • 2 cups lukewarm water (if using whole wheat you can put a little more water)

  • 1/2 teaspoon yeast

  • 2 teaspoons salt

Optional Garlic Flavoring

  • 1 cup garlic cloves

  • 1 cup oil

  • 2 tablespoons Everything but the Bagel Sesame

Directions

Prepare the Bread

1.

Place all the ingredients in a large bowl and mix till all the flour is incorporated. Cover with saran wrap and let sit for 12-18 hours.

Place Dutch oven in oven at 475 degrees Fahrenheit.

3.

Line parchment paper with about 1/4 cup flour and put dough on the flour.

Fold like an envelope and allow to rest on envelope side for a half an hour covered. If adding garlic (method follows), put cloves in the middle before folding. Flip back over and place dough with the parchment paper into Dutch oven.

5.

Bake covered for 20 minutes, then remove cover and bake another 20 minutes. Place on cooling rack. Enjoy!

Prepare the Optional Garlic Flavoring

1.

Add garlic cloves and Everything but the Bagel Sesame to one cup oil. Broil for 15 minutes.

my Dutch oven can only go in an oven up to 44 degrees, I’d that ok?

Can this be made without a Dutch oven?

A 5 or 6 quart saucepan or stock pot should work – just make sure it’s oven-safe and can go up to 500 degrees F.
