This is a healthy and delicious banana chocolate chip muffin recipe. The bananas have their own sweetness and the chocolate adds a nice kick to form a hearty muffin. Sugar is optional, but not recommended.
Cream together oil, eggs, and sugar, if using, for 1 minute.
Mix together cinnamon, vanilla, water, and mashed banana. Separately, combine flour, baking powder, baking soda, and salt. Mix together oil-sugar mixture, banana mixture, and dry ingredients well. Stir in the chocolate chips.
[Editor’s note: We baked these as mini muffins at 350 for 15 minutes.]
Variations:
To make it healthy, grind oats in place of flour and skip the sugar. Use 1/4 cup applesauce and 1/4 cup olive oil instead of regular oil.
