Notes:
I planned to make this with fried, breaded mozzarella cubes or sticks but found that the shredded cheese lent itself better to the recipe. (The fried breaded cubes/sticks are great too, though. If that idea appeals to you, use frozen purchased ones, to keep this dish really quick and simple.)
