I’m always down for breakfast food, which is ironic because I barely ever eat breakfast. If you’re making these for a party, consider poaching your eggs in advance instead of frying them! You can store them in cold water in the fridge for up to five days and just reheat them in hot water for a minute or two before you’re ready to serve.
24 frozen hash browns, baked according to package directions
3 6-ounce (170-gram) packages beef fry or pastrami, sliced in half
12 eggs
salt, to taste
pepper, to taste
1/2 cup Gefen Mayo
1 teaspoon Tonnelli Sriracha
1 tablespoon Gefen Maple Syrup
2 avocados, sliced
In a large skillet, cook the beef fry or pastrami until crispy on both sides. Transfer to a paper-towel-lined dish.
In the same pan, spray cooking spray and cook 12 eggs over-easy, or according to your preference. Season with salt and pepper. Carefully transfer to a plate until ready to assemble.
Combine mayo, sriracha, and maple syrup in a small bowl.
To assemble, cut eight-inch (20-centimeter) strips of Gefen Parchment Paper and lay out a hash brown, a few slices of avocado, a few slices of beef fry, an egg, and a drizzle of sriracha mayo, and top with another hash brown. Fold the parchment paper tightly and hold it all together for serving.
