Birthday Acai Board

Ingredients

Blended Acai Base

  • 4 packets of frozen blended acai

  • 1 and 3/4 cups almond milk (or water)

  • 2 cups frozen strawberries

  • 2/3 cup frozen mango

  • 2 cups ice cubes

  • 5 and 1/2 tablespoons almond butter

  • 2 tablespoons honey

Toppings

  • frozen mango

  • coconut chips

  • frozen blueberries

  • 2 kiwis

  • frozen strawberries

  • mini chocolate chips

  • Honey Granola – like this one

Drizzle (Optional)

  • almond butter

  • oil

Optional Supplies

  • 12×16 acrylic serving tray – like this one

  • salad dressing dispenser bottle for drizzle – like this one

Directions

Make the Acai Base

1.

Blend all the ingredients of the acai base in a blender or a food processor until creamy.

2.

Spread the acai base onto the lucite board.

3.

Freeze overnight until firm.

Make the Drizzle (Optional)

1.

Place some almond butter with a little bit of oil in a bowl (or directly into the salad dressing dispenser bottle).

2.

Melt in the microwave for 30 seconds to melt

3.

Mix until creamy. The mixture should be thick but runny enough to make a line.

4.

Pour the mixture into a salad dressing dispenser bottle, or a thick plastic bag.

Set Up the “12” Shape

1.

Using Microsoft Word, or a similar editor, print out the 1 and 2 numbers (or any picture!) that you would like on the acai board.

2.

Cut out the shapes.

3.

Lay the papers on the acai board, where you would like the numbers to be.

4.

Leave the papers there as you add the toppings.

Prepare the Toppings

1.

Keep the acai board in the freezer until you have all the toppings ready.

2.

Cut the fruit into small dices.

3.

If the granola has very large chunks, you may want to break them to more edible pieces.

Spread the Toppings

1.

Spread a row of each topping side by side (except the granola).

2.

As you near the paper, lay the topping next to it, to help form the shape.

3.

Continue until the entire acai board is covered besides the paper.

4.

Remove the paper.

5.

Spread the granola onto the space that had the paper, to form the shape of the number 12.

Add the Drizzle

1.

If the drizzle is too thick, put it back in the microwave for 10-15 seconds.

2.

If you are using a bag for the drizzle, snip a small corner.

3.

Draw a line of almond butter around the border of the number 12. (Alternatively, you can draw diagonal lines across the toppings for additional design.)

4.

Place the acai board back into the freezer so that it doesn’t melt.

Serving the Acai Board

1.

Take the acai board out of the freezer about an hour before you plan to eat it.

2.

Enjoy your stunning acai board!

Notes:

This recipe yields an acai board that is less than 1 inch high. If you like your acai board higher, you can increase the ingredients by 25%. If you have a smaller 11×14 lucite tray, then you can decrease the ingredients by 25% of leave it as is for a little higher base.

We served the almond butter drizzle on the sweet table next to the acai board in a salad dressing dispenser bottle. We also melted peanut butter, chocolate chips and a bit of oil in a second dispenser bottle as a another exciting drizzle!

This recipe can be used to make a standard acai board without the “12”. You can add diagonal lines of almond butter drizzle across the acai board for design. It is delicious!
