At my daughter’s bas mitzva, we made a themed acai board with a “12” embedded in it, instead of the typical layered cake. It came out so stunning and it was the perfect centerpiece for the sweet table! The acai board was delicious and healthy, and it was a perfect dessert that was enjoyed by all ages!!
Yields: 12 x 16 acai board
4 packets of frozen blended acai
1 and 3/4 cups almond milk (or water)
2 cups frozen strawberries
2/3 cup frozen mango
2 cups ice cubes
5 and 1/2 tablespoons almond butter
2 tablespoons honey
frozen mango
coconut chips
frozen blueberries
2 kiwis
frozen strawberries
mini chocolate chips
Honey Granola – like this one

Blend all the ingredients of the acai base in a blender or a food processor until creamy.
Spread the acai base onto the lucite board.
Freeze overnight until firm.
Place some almond butter with a little bit of oil in a bowl (or directly into the salad dressing dispenser bottle).
Melt in the microwave for 30 seconds to melt
Mix until creamy. The mixture should be thick but runny enough to make a line.
Pour the mixture into a salad dressing dispenser bottle, or a thick plastic bag.
Using Microsoft Word, or a similar editor, print out the 1 and 2 numbers (or any picture!) that you would like on the acai board.
Cut out the shapes.
Lay the papers on the acai board, where you would like the numbers to be.
Leave the papers there as you add the toppings.
Keep the acai board in the freezer until you have all the toppings ready.
Cut the fruit into small dices.
If the granola has very large chunks, you may want to break them to more edible pieces.
Spread a row of each topping side by side (except the granola).
As you near the paper, lay the topping next to it, to help form the shape.
Continue until the entire acai board is covered besides the paper.
Remove the paper.
Spread the granola onto the space that had the paper, to form the shape of the number 12.
If the drizzle is too thick, put it back in the microwave for 10-15 seconds.
If you are using a bag for the drizzle, snip a small corner.
Draw a line of almond butter around the border of the number 12. (Alternatively, you can draw diagonal lines across the toppings for additional design.)
Place the acai board back into the freezer so that it doesn’t melt.
Take the acai board out of the freezer about an hour before you plan to eat it.
