Diets Bitter radicchio and figs and grilled peach come together for the perfect sharp + sweet bite! Sophisticated palates, we’re looking at you!
2 figs
1 peach
1 head radicchio
1 large tomato, heirloom
2 tablespoons slivered almonds (optional)
1 stalk scallion, sliced on a bias (optional)
1/4-1/2 cup diced dill
1 tablespoon pomegranate molasses
1 tablespoon salt, coarse preferably
2 teaspoons Haddar Dijon (optional)
1-2 teaspoons stevia (optional)
Slice figs into halves or quarters
Slice peaches into halves or quarters
Grill both- figs should be slightly charred/caramelized, and peaches should be softened but still hold some body when sliced.
Shred radicchio, and slice tomatoes into rounds.
Place radicchio and tomatoes into overlapping layers. Tuck in peaches and figs.
Garnish with scallions, almonds, and dill.
Combine dressing by either pouring over your drizzle of pomegranate molasses and a sprinkle of salt. If desired, mix molasses, salt, dijon, and stevia in a bowl and then dress.
