1/2 cup water
1/2 cup Haddar Brown Sugar
1 and 1/2 cups Gefen Tapioca Flour or starch
1/2 cup water
1/2 cup Haddar Dark Brown Sugar

1 cup of milk
6 ounces brewed tea or coffee, of choice
In a pot, add the sugar and water and heat over medium heat until dissolved. Then add in about three tablespoons of tapioca flour and whisk vigorously. A gelatinous mass will thicken and form within a minute.
Add in the rest of your tapioca flour and try to integrate it as much as possible before turning it out onto a clean work surface to knead.
The dough will be hot, but that is when it is most pliable. Work while it’s warm to form a smooth, round ball. Ensure that all dry spots are integrated and there are no lumps. The dough will be slightly tacky but shouldn’t be very sticky and should maintain its shape. If you are seeing that the dough ball flattens (similar to the first video), add more tapioca starch and knead until integrated.
Divide into four sections and cover the remainder with plastic wrap.
Form each section into a 1/2-inch thick rope and then slice into 1/2-centimeter sections. Roll into balls.
If you see the balls are too dry and are forming cracks, dip your finger into water and re-roll. If you see that the balls are sticky, add a bit of tapioca flour to prevent sticking. Ensure you are making the balls a bit smaller than you intend for them to be because they grow once they are boiled. Set the boba balls on a sheet pan lined with parchment paper to rest and dry at least four hours or up to overnight.
Bring a large pot of water with at least six cups of water to a boil, and add your boba balls. Stir immediately to prevent sticking. Allow to boil for at least 30 to 40 minutes, stirring every once in a while. The balls should float to the top and be mostly translucent in the center. Then turn off the flame and cover the pot to allow the balls to turn completely translucent.
Strain your boba pearls and put them into cold water while you make the syrup.
In a pot, add the water and sugar and bring to a boil. Allow the mixture to reduce by half (about five to eight minutes). Then add in your boba pearls and cook in the syrup for a few minutes until it thickens.
Use the boba while it’s warm but not hot. Add two tablespoons of the boba and syrup to a glass with ice and milk. Add in your tea, if you are using any. Then mix and enjoy!
