Braised Chicken in Curried Pineapple Sauce

This chicken is soft, sweet, and has a depth of flavor that can't be beat. A little labor intensive, but worth it.

Start Cooking

Prepare the Sauce

  1. Combine sauce ingredients in a small pot and bring to a boil.

  2. Simmer for 15 minutes.

  3. Add cornstarch and water mixture and cook an additional five minutes.

Prepare the Chicken

  1. Meanwhile, in a shallow dish, combine flour with seasonings.

  2. Heat oil in large skillet.

  3. Dip chicken pieces in seasoned flour on both sides and fry until white and beginning to turn golden.

  4. Preheat oven to 350°F (180°C).

  5. Place chicken pieces in a 9- x 13-inch pan. Pour sauce over chicken. Bake 20 to 25 minutes.

  6. Serve with steamed brown rice.
