This chicken is soft, sweet, and has a depth of flavor that can’t be beat. A little labor intensive, but worth it.
2 and 1/2 – 3 pounds (1 – 1 and 1/2 kilograms) thinly sliced chicken breasts
3/4 cup flour
1 tablespoon Gefen Garlic Powder
1/2 teaspoon salt
1/4 teaspoon black pepper
oil, for frying
3/4 cup vinegar
3/4 cup water
2 tablespoons Glicks Ketchup
4 tablespoons sugar
2 tablespoons apricot jam, such as Tuscanini
4 teaspoons curry powder
1 (20-ounce/565-gram) can Gefen Pineapple Tidbits with juice
1 tablespoon Gefen Cornstarch, mixed with 1/4 cup cold water
Combine sauce ingredients in a small pot and bring to a boil.
Simmer for 15 minutes.
Add cornstarch and water mixture and cook an additional five minutes.
Meanwhile, in a shallow dish, combine flour with seasonings.
Heat oil in large skillet.
Dip chicken pieces in seasoned flour on both sides and fry until white and beginning to turn golden.
Preheat oven to 350°F (180°C).
Place chicken pieces in a 9- x 13-inch pan. Pour sauce over chicken. Bake 20 to 25 minutes.
Serve with steamed brown rice.
