Broccoli Kugel

Most broccoli kugels call for mayonnaise, which I don’t love. This recipe, however, omits the standard mayonnaise and soup mix and doubles up on taste with aromatic herbs.

Yield. 9×13-inch pan

1h 20m 8
Easy Vegetarian Pescatarian Gluten Free Passover Parve

Contains: Egg

Directions

  1. Fully thaw the broccoli by either microwaving (allow to fully cool) or defrosting overnight in the fridge.

  2. In a frying pan on medium heat, saute onion with two tablespoons oil for 10-15 minutes until browned. Add garlic and cook for another minute. Set aside.

  3. Preheat oven to 350 degrees Fahrenheit. Grease your baking pan or line it with parchment paper.

  4. Place the broccoli in a colander and squeeze it repeatedly to remove all excess liquid.

  5. Whisk together eggs, then add the broccoli, potato starch, basil, oregano, salt, pepper, red pepper flakes (if using), and remaining four tablespoons oil. Stir until combined.

  6. Add in the onions and garlic, then transfer to prepared pan and bake for 45 minutes to one hour until kugel is golden brown on the sides and slightly firm in the center. (To brown the edges even more, broil the kugel for the last five minutes, but keep an eye to avoid burning!)
