There’s nothing like a hearty soup to keep you warm on a cold winter night. But, it can be really difficult for a full-time working mom to make a fresh soup that doesn’t take too long to prepare. That’s how I came up with this amazing recipe for broccoli soup that uses minimal ingredients, doesn’t involve defrosting a bag of frozen broccoli, and uses NO consommé or soup mix. Instead, with just 6 simple ingredients and only 10 minutes of prep time, you can have a thick and tasty soup the whole family will enjoy!
1 bag broccoli slaw
1 large onion, chopped
2 potatoes, cut into chunks
3 frozen garlic cubes
2 frozen dill cubes
2 boxes vegetable broth (for a larger soup, add more broth)
salt, pepper, garlic powder, onion powder to taste
Sauté the onion in a large pot over a medium flame until slightly golden (about 5 minutes).
Add in the broccoli slaw and stir for an additional 3 minutes.
Add the remaining ingredients and, once the soup reaches a boil, lower the heat and allow to simmer for at least 1 hour.
Once finished, you can serve fresh or cool completely and immersion blend for a thick and creamy soup.
