After briefly salting, flounder or other white fish is spread with mayonnaise and broiled for just a few minutes under very high heat. This simple preparation yields a deliciously moist, well-cooked fish. Courtesy of the Women’s Branch of the OU.
1 pound flounder fish
1 tablespoon oil, such as Gefen Cottonseed Oil
salt and pepper, to taste
3 tablespoons Gefen Mayonnaise (or homemade)
2 teaspoons chopped parsley
Put fish in large bowl with one teaspoon of salt. Cover with water and let it soak for 20 to 30 minutes. Drain well.
Arrange fish in single layer on baking pan and brush with oil.
Sprinkle with salt and pepper.
Spread mayonnaise over fish and sprinkle with parsley.
Broil about three inches from heat source for about two minutes until golden brown and fish flakes easily with fork.
Sprinkle with lemon juice.
