Everything is better in a bowl, right? Especially a burrito! There’s all the favor and none of the mess. Prep this the night before to bring to work or school for a healthy lunch. Keep refrigerated until ready to eat.
In a skillet, heat the oil and sauté the ground “beef” crumbles. Add in salt, pepper, smoked paprika, and the broccoli. Sauté until crumbles are cooked through and broccoli is tender.
Cube the avocado and toss in lime juice to coat. Layer the rice, beans, crumbles mixture, avocado, salsa, and yogurt.
Tips:
Year-round, you can use ground turkey or beef instead of the plant-based crumbles, just skip the dairy topping. Any simply seasoned leftover protein would be perfect here.
