Browned Beef and Herb Cabbage Salad

Ingredients

Herb Cabbage Salad

  • 16 ounces (450 grams) shredded green cabbage

  • 4 scallions, thinly sliced

  • 1/2 cup packed cilantro or parsley, washed and very finely chopped

  • 3/4 cup roasted salted peanuts

Browned Beef

  • 1/2 teaspoon ground mustard

Dressing

Directions

Prepare the Dressing

1.

Place all ingredients in a jar or container and shake well until combined; set aside.

Prepare the Browned Beef

1.

Heat a large frying pan over high heat. Place meat in the pan in a single piece. Sear for two to three minutes, until browned on the outside. Flip and repeat.

Reduce heat to low. Add salt, garlic, and mustard. Stir and break up the meat into small pieces. Continue to cook until cooked through.

To Assemble the Salad

1.

Place cabbage, scallions, cilantro or parsley, and ground beef in a large bowl. Add dressing and toss until evenly coated. Set aside for 10–20 minutes.

2.

Just before serving, add peanuts and stir to distribute.

Notes:

Plan Ahead: Dressing can be made up to a week ahead of time. Ground beef can be made one to two days ahead. Bring meat to room temperature before serving. Salad should be assembled fresh.
