I’ve tested many one-bowl brownies and none came near to topping this one. Not even by a close margin. This is moist, fluffy, super simple and delicious. It works great for cupcakes too. And great if you’re short on eggs, as it only uses two.
2 cups Glicks Flour
3/4 cup Gefen Cocoa
1 and 3/4 cups sugar
1 and 1/2 teaspoons baking soda
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon coffee diluted in 1 cup water
an additional 1 cup of water
2 eggs
1/2 cup oil
1 teaspoon Gefen Vanilla Extract (do not skip this; it gives an amazing taste!)
Mix flour, cocoa, sugar, baking soda, baking powder, and salt directly in the baking pan with a fork. For cupcakes, you can shake these ingredients together in a two-gallon ziptop bag.
Add coffee, eggs, oil, and vanilla (in your bag or pan) and mix.
For cupcakes, snip the corner of the bag and divvy into muffin holders.
Bake at 350 degrees Fahrenheit for 30 minutes.
