I really believed that we had inadvertently ruined the concept of muffin tops by baking them without the bottom. Where’s the gratification of pulverizing a perfectly portioned cake by destroying its golden top? Jokes aside, is the crispy texture appreciated when you don’t have the contrast of a fluffy underbelly? Turns out, I was wrong. There’s texture, there’s crispiness, and with the flavors of coffee and chocolate throughout, there’s delicious satisfaction, no underbelly required. Yields 15 muffin tops

Ingredients

Cappuccino Muffin Tops

  • 3 cups Glicks Flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1 teaspoon salt

  • 1 and 1/2 bars praline-flavored chocolate, chopped

Coffee Crumbs

  • 1 teaspoon instant coffee granules, dissolved in 1 tablespoon water

  • 1/3 cup oil

Directions

Prepare the Coffee Crumbs

1.

Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with Gefen Parchment Paper.

2.

Combine flour, sugar, and cinnamon. Mix until combined.

3.

Add the coffee and oil, and mix to form crumbs. Set aside.

Prepare the Muffin Tops

1.

Mix sugar, oil, vanilla, and applesauce in a bowl until combined. Add the coffee and mix well. Then add the eggs.

2.

Pour in the flour, baking soda, baking powder, and salt. Mix until just combined. Add the chocolate and fold in. You should be left with a thick but loose batter.

3.

Using a 1/4-cup measuring cup, place scoops of batter onto the prepared baking sheet. Top with crumbs.

4.

Bake for five minutes, then lower the temperature to 350 degrees Fahrenheit (175 degrees Celsius) and bake for another five to seven minutes.

Lovely recipe and comes out beautiful, but it is very coffee based (which should be obvious!) so if you don’t love coffee flavoured cakes and cookies, give this one a miss

In the picture it looks like there is something else in the recipe, something white, maybe white chocolate, maybe nuts? Is something missing, they look yum and would love to make them like that

You’re right. I would guess that’s the praline-flavored chocolate or crumb topping you’re seeing.
