These are a really, really amazing and special treat that are also super easy to make! They’re a keeper over here! There’s no caramel actually in these truffles: This is a treat that you really feel good about enjoying. Even though everything here is natural, that doesn’t mean it feels like less of a treat! True, they’re more adult-friendly than kid-friendly (once I was melting chocolate, I coated chocolate sandwich cookies and added rainbow sprinkles for the kids), but make this treat in minutes and bring it out when it’s dessert time (whether it’s Tu BiShvat or after any Shabbat meal… Hey, these would even be amazing for Pesach!) and you and your guests will enjoy something that’s really special and unique.
Yield: 15 truffles
15 fresh and soft Medjool dates, like Beleaves
1/3 cup Gefen Almond Butter
2 (3.5-ounce) bars Geneve Dark Chocolate, chopped
almond/nut crunch
Open dates and remove the pit (check dates at this point). Add about a teaspoon of almond butter in the center of the date and close date.
Melt chocolate and coat dates (you can coat them in the bowl or spoon the chocolate over them).
Place dates on a piece of Gefen Parchment Paper and sprinkle with nut crunch. Place in freezer to set and keep frozen until just before serving.
