Gluten free sticky date truffles are a welcome healthy addition to a sweet table or Passover snack repertoire. Yields about 25 truffles.
1 pound pitted dates
1 cup slivered almonds, roasted
3/4 cup Gefen Coconut Chips
1/4 cup unsweetened shredded coconut, for rolling
25 almonds, optional
Blend the dates, almonds & coconut chips in a food processor until a smooth paste is formed.
Form medium size balls, shaping them with your hands. The natural oil the dates release will help them not stick to your hands and super easy to handle.
Roll each ball into the unsweetened shredded coconut and optional top with an almond.
