1 pound carrots, sliced
2 tablespoons oil
2 tablespoons flour
4 tablespoons sugar
1/2 cup water
1/2 teaspoon salt
4 ounces pitted prunes (optional)
Saute carrots in oil over low heat for 15 minutes.
Add flour and stir well, cooking for five more minutes. Add prunes, water, sugar and salt.
Cook over low heat for 20 to 30 minutes, until carrots are tender.

Following Alexandra’s review, I made this without the flour and it came out delicious!
the flour wasn’t a good addition. my husband and I both thought it gave an odd texture. maybe tastes better without flour but I just threw it away instead of serving.
