Carrot Breakfast Cake

Easy carrot cake or muffins are a delicious treat for brunch or snack. Topped with a classic cream cheese frosting.

Start Cooking

Prepare the Cake

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Beat eggs and sugar. Add oil and applesauce.

  3. Slowly, add all dry ingredients.

  4. Pour into a nine- by 13-inch or bundt pan. Bake for one hour and 20 minutes.

Note:

Can also be baked in muffin tins.

For the Frosting

  1. Blend cream cheese and sugars. Spread onto cooled cake.

  2. Garnish with chopped walnuts or shredded carrots.
