Diets A multi-layered, multicolored vegetable kugel. Please note this is a “simcha recipe,” meaning it has a very large yield. If you don’t need this much, you could halve the recipe.
3 cups oil
4 potatoes
4 onions
3 bunches carrots
4 teaspoons salt
2 teaspoons pepper
6 cups flour
12 pounds zucchini, unpeeled
4 medium onions, grated
2 cups Gefen Bread Crumbs
8 ounces margarine
8 tablespoons sugar
2 teaspoons pepper
2 teaspoons salt
8 eggs
cornflakes crumbs, for sprinkling
4 sweet potatoes
1/4 pound margarine
Process all vegetables. Mix well with remaining ingredients.
Divide into two parts. Spread into two nine- by 13-inch pans.
Bake at 375 degrees Fahrenheit for 30 minutes.
Cook zucchini until tender. Drain and mash finely. Combine zucchini with remaining ingredients.
Divide into two parts. Pour each part over carrot layer in the pans.
Sprinkle cornflakes crumbs and bake for one hour and 10 minutes. Cut into two-inch squares.
Cook sweet potatoes in small amount of water. Drain and mash well.
Add margarine and mix well. With a decorating bag and a star tip, form a swirl in the center of each kugel square.
Return to oven and bake for 12-15 minutes.
