1 cup boiling water
1 teaspoon Gefen Salt
2 tablespoons oil, such as Heaven & Earth Coconut Oil, divided
Place flour in a bowl. With a spoon, make a small well (space) in the flour and add to it salt, one tablespoon oil, and water.
Mix all with wooden spoon. The goal is to have a playdough-like consistency. Add a little water at a time to get to that consistency. Then add another tablespoon of oil while kneading.
Place dough in a ziplock bag. Let it rest for two minutes.
Make about six balls.
Use a rolling pin to shape the tortillas (roll them out very thinly).
Warm up a pan on medium heat. Place a tortilla on the pan just until you see brown dots form, then flip to the other side to cook. It may bubble – just push it down. Continue cooking until golden.
