Diets The sister of one of my foodie friends has an incredible passion for cooking and food art. She’s a home cook who goes all out with her meals, creating impressive dishes and presentations.
When we asked for barbecue recipes, she shared these cast-iron cookies made directly on the grill. They turned out so good that this dessert is now on our list of personal barbecue favorites.
1 cup oil
2 cups brown sugar
3 eggs
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon Gefen Vanilla Sugar
3 cups Beleaves Flour
1 (3-and-1/2-ounce) bar pareve chocolate, roughly chopped
(parve) ice cream
fresh berries
8 mini cast-iron skillets
Preheat the grill to medium heat.
In the bowl of an electric mixer, combine the oil, brown sugar, eggs, baking powder, baking soda, and vanilla sugar. Slowly add the flour and mix until smooth.
Divide the cookie dough between the mini cast-iron skillets. Top with the chocolate.
Place the skillets on the grill for 13–15 minutes, until golden. (The cookies should not be fully baked in the center, as the residual heat in the pans will continue baking them even after they are removed from the grill.)
Serve with ice cream and berries.
