Diets Rather than using breadcrumbs or matzoh meal, in this burger it’s the cauliflower that acts as the “glue” to hold everything together. Thanks to Estie H., my gym buddy, who came up with this great idea.
1 teaspoon Gefen Olive Oil
1 small onion, diced
10 ounces Beleaves Frozen Cauliflower Florets or other frozen cauliflower
1 clove garlic, minced or 1 cube Gefen Frozen Garlic
1/2 teaspoon salt
pinch of pepper
1 and 1/2 pounds ground chicken, and/or ground beef
Heat oil in a sauté pan over medium heat.
Add onion and sauté until translucent, about five to seven minutes.
Add cauliflower, garlic, salt and pepper and let cook for an additional eight to 10 minutes, until cauliflower is slightly softened. Remove from heat and let cool.
Using a fork, lightly smash the cauliflower, leaving some pieces intact. Combine cauliflower mixture with ground chicken and/or beef. Shape into burgers.
Preheat oven to broil. Broil on high for 10 minutes, turning halfway through.
Yields 8 to 10 burgers
