Ingredients

Cauliflower Soup

  • 1 garlic head

  • 2 potatoes

  • 1 bag frozen cauliflower

  • oil

  • salt

  • pepper

  • 1 large onion

Directions

Prepare the Cauliflower Soup

1.

Peel a whole head of garlic. Wrap in parchment paper and then in silver paper. Roast in the oven on 450° for 45 minutes.

2.

Meanwhile saute onion until translucent. Add potatoes and cauliflower and saute for an additional 20 minutes.

3.

Cover with water and season with salt and pepper.

4.

Cook on medium low for 2 hours. Add roasted garlic and blend with immersion blender until smooth. Cook for additional 20 minutes.
