This is a super fun take on sushi. The ingredients listed here are just to spark your own creativity. What’s your favorite sandwich? Can you make it work as a challah sushi? Start with one large challah (fresh is best). Then pick a base sauce or spread, a protein, and lots of colorful veggies. See what you can create! Yield: 3–4 sushi rolls (6–8 pieces per roll)
Gefen Mayonnaise + sliced cheese + carrot matchsticks + lettuce
cream cheese + lox + cucumber matchsticks + scallions
Gefen Mustard and mayo + smoked turkey + pickles + red peppers
Gefen Spicy Mayo + pastrami + pickled red onion + purple cabbage
Cut off the crust from the challah completely. Slice lengthwise into four slices.
Place a challah slice between two pieces of plastic wrap. Use a rolling pin to flatten the challah until it’s thin enough to roll up.
Remove the top layer of plastic wrap. Spread the sauce or spread of your choice over the surface of the challah.
Add the protein and vegetables in neat rows.
Starting at one of the long ends, roll up tightly, using the saran wrap to hold the roll together. Squeeze tightly to form a log.
Remove saran wrap. Slice into sushi-size pieces.
Optional: Brush the outside of the roll with the sauce of your choice and roll in black sesame seeds.
