2 cups Manischewitz Matzo Cake Meal
1/3 teaspoon salt
1 tablespoon maple syrup
1 egg
1/2 cup olive oil
1 cup water
3 large apples
1/3 tablespoon Gefen Ground Cinnamon
120 grams (about 1/2 cup) Gefen Maple Syrup
handful of whole walnuts
handful of raisins
1/2 cup matzo meal
In a bowl, mix matzo meal and salt. Add olive oil, maple syrup, water, and egg. Mix until a smooth and elastic dough forms. Let sit for 15 to 20 minutes at room temperature.
Peel, core, and cut the apples into small strips. Chop the walnuts with a knife.
Combine apples with cinnamon, maple syrup, walnut, raisins, and matzo meal. Set aside.
Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius) and line a baking sheet with parchment paper.
Roll the dough out as thin as you can. Brush it with a little bit of olive oil.
Pile the apple filling on top of the dough. Use a slotted spoon so the liquid stays in the bowl.
Fold the margin of the dough over onto the filling, then roll up. Carefully transfer the strudel to the prepared baking sheet, seam-side down. Brush with a little bit of egg yolk.
Bake for about 40 to 45 minutes in the oven, until lightly golden on top.
