I often collect recipes from Kallahs’ friends to make cookbooks for their bridal showers. This one was sent to me and I made it that very Shabbos. It was a big hit!
1-2 apples of any variety
1 teaspoon Gefen Cinnamon
1/4 cup Jeunesse Pink Moscato or other sweet red wine
1/4 cup crushed walnuts
1 acorn or butternut squash
Dice the apples into small chunks.
Mix with the wine, cinnamon and walnuts. Put the mixture into a sauce pan and heat up until the apples are very slightly cooked, still hard but beginning to soften. (about seven to 10 minutes).
Cut the squash in half and scoop out the seed mixture.
Stuff the inside of the squash with the apple mixture and bake for about 45 minutes until the squash is soft.
