2 pounds skinless boneless chicken thighs
1/2 box Bowery Cilantro
juice of 1 lime
4 cloves garlic
1/2 cup mayonnaise
1/4 cup olive oil
2 tablespoons brown sugar
2 teaspoons kosher salt
1/2 teaspoon cumin
1/4 teaspoon black pepper
1 mango
1 jalapeno, deseeded
1/2 red onion
Dice all the ingredients for the salsa and place in a small bowl.
Add the rest of the ingredients besides the chicken in a blender and blend until smooth. Place the chicken in the mixture and marinate for one to three hours.
Preheat a grill or a grill pan to medium-high heat. Sear the chicken for five minutes per side.
Top with the mango salsa.
Add-ons for this dish can be sliced avocado, lime, chili pepper, etc.
