Yield: 4 sandwiches
8 slices white or whole wheat bread
8 slices cheddar cheese
2 cucumbers, thinly sliced into rounds
1 avocado, thinly sliced
4 large kale leaves
Toast bread lightly.
On one slice of bread, place kale leaf, two slices cheddar, cucumber rounds, and avocado slices and cover with another slice of bread.
Repeat to make four sandwiches and serve.
