This cheese blintze recipe was passed down to me from my mother, who is a Holocaust survivor. I’ve been using this recipe since 1970. Each and every Chanukah I prepare a huge batch of blintzes for my family party. Every single blintze is finished and the plate is licked clean.
I have been teaching Home Management for many years and I give this recipe to all my students. The results are “This is the best blintze recipe ever! Yum!”

3/4 cup flour
3/4 cup milk
1/3 cup water
3 large eggs
1 heaping tablespoon confectioner sugar
1 teaspoon butter, used for frying
1 large loaf farmer cheese
3 tablespoons cottage cheese
1 teaspoon vanilla sugar
drop vanilla extract (optional)
2 egg yolks
sugar, to taste
more vanilla sugar and regular sugar (if you want it really sweet)
Using a blender, combine all the ingredients.
Use a small frying pan and heat up one teaspoon of butter. On a medium flame, add a small amount of batter and evenly spread in the pan. When the crepe is a golden color flip it over and let it become that same golden color.
After all crepes are done, fill each one with a heaping tablespoon of filling. Roll up the crepe and you may tuck in sides.
Each batter should yield between 12-14 blintzes depending on how thick or thin you make the crepe.
