Diets To be honest, apples aren’t doughnuts, and doughnuts aren’t apples. But let me show you the wild, wild world of apples and what you can create with them. These apples are perfect for Chanukah since they make a great party appetizer that will get your guests talking. They also bring the dairy factor to commemorate Yehudis and her bravery. Serves 6 (to be honest, it will only serve 3 because everyone takes seconds)
6 apples (Pink Lady, Golden Delicious, Granny Smith, Honeycrisp, and Fuji are all great)
8 ounces cream cheese, room temperature
1/4 cup sugar
1 egg
1 teaspoon Gefen Cinnamon
1 teaspoon Gefen Vanilla Extract
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper and set aside.
Cut off the apple tops and core the centers to remove the seeds. An apple corer will do the job neatly and easily, but you can use a knife if you don’t own one.
In a bowl, cream together the cream cheese, sugar, egg, cinnamon, and vanilla extract. Mix until smooth. Do not overfill, as the cheesecake rises as it bakes.
Fill each apple 2/3 of the way with the cheesecake mixture.
Place filled apples on the prepared baking sheet and bake 25 minutes, or until the cheesecake center is set.
Set aside to cool fully before serving. Top as desired and enjoy at room temperature or chilled.
